Preparation

  1. Cut the tuna into tartare.
  2. Top with ponzu.
  3. Dress the tuna mixture on a desired plate.
  4. Finish with an edible flower, tufts of sour cream and Natural Sauce Aji Amarillo, Rastoria Seaweed from the Grand Decor Collection and a little Chuka Wakame.
