These sferas are made from a smooth crémeux based on eggs, cream, chocolate and caramel. We make an infusion of tonka beans during the production process, giving off its subtle aroma and flavour to this crémeux base. Tonka beans have a vanilla-like flavour with hints of almond and cinnamon, which goes perfectly with the chocolate and caramel used. These sferas are perfect for decorating cakes, pastries and desserts and give a beautiful, elegant look to the whole.
Thawing time: 15 to 20 minutes at room temperature (if immediate use), 20 minutes in the refrigerator.
Store at -18°C. After thawing, store for a maximum of 48 hours between 0 and 4°C. Do not refreeze a thawed product.
