This fine red fruit mousse is carefully prepared and has the delicious, fruity flavour of raspberries and a subtle hint of strawberry and dark chocolate. The quenelles are elegantly shaped and finished with a red velvet effect. This dessert component is versatile and can be served as part of a dessert with fruit or other delicious flavour combinations.
Thawing time: 15 to 20 minutes at room temperature (if immediate use), 25 minutes in the refrigerator.
Store at -18°C. After thawing, store for a maximum of 48 hours between 0 and 4°C. Do not refreeze a thawed product.
