Paella Valenciana with Cracker Saffron

Ingredients

  • Rabbit
  • Chicken
  • Onion
  • Garlic
  • Carrots
  • Peas
  • Arroz Bomba
  • Tomato passata
  • White wine
  • Saffron
  • Pepper
  • Salt
  • Chicken broth
  • Paprika powder
  • Lemon
  • Cracker Saffron

Preparation

  1. Preheat the deep fryer to 180°C.
  2. Deep-fry the crackers for +- 10 seconds. For best results, use sunflower or peanut oil.
  3. Season the chicken and rabbit with salt and pepper and fry in a hot pan with olive oil.
  4. Peel and finely chop the garlic and onion.
  5. Cut the carrots into the desired shape.
  6. Fry the garlic, onion and carrots.
  7. Turn down the heat slightly and add the rice and peas.
  8. Add tomato passata and white wine.
  9. Season the paella with saffron, pepper and salt.
  10. Add the chicken stock a little at a time.
  11. Simmer on a low heat for at least 25 minutes.
  12. Finish with paprika, lemon juice and Crackers Saffron.
