Oriental broth soup with raw salmon and Cracker Wasabi

Ingredients

  • Kombu
  • Dried mushrooms
  • White miso paste
  • Stir-fry vegetables
  • Raw salmon
  • Wakame
  • Cracker Wasabi

Preparation

  1. Preheat the deep fryer to 180°C.
  2. Fry the crackers for +- 10 seconds. For best results, use sunflower or peanut oil.
  3. Bring a pot of water to boil.
  4. Place the kombu and dried mushrooms in it.
  5. Allow the stock to infuse and drain when the flavour is to your liking.
  6. Add miso paste.
  7. Fry the wok vegetables al dente.
  8. Thinly slice the salmon.
  9. Place wok vegetables in a bowl and pour over with stock.
  10. Top with slices of salmon and wakame.
  11. Serve with Crackers Wasabi.
